Dividers

1 products

A divider turns a batch of dough into pieces of identical weight. It is the station whose consistency governs baking: a weight spread across pieces becomes a spread in baking, and therefore an irregular product on display.

How to choose
Two figures are comparable: divisions per cycle and the weight range per piece. Cutting accuracy matters more than the advertised rate as soon as you sell by weight or your customer expects a constant calibre.
Integration
A divider makes no sense on its own. It has to match the mixer's capacity upstream and the moulding format downstream, or it simply moves the waiting from one station to the next without solving anything.

Common question — Is a divider worthwhile at low volume?

At very low volume, hand dividing remains defensible. The benefit appears as soon as consistency becomes a selling point, or once several people rotate through that station.
